Zucchini is one of the most mild varieties of squash and one of the most versatile. Our local summer zucchini is especially sweet and tasty. We try to get them in small, when they are the most tender with fewest seeds. Zucchini strips lightly charred on the grill or roasted in the oven are delicous on their own just sprinkled with good olive oil and sea salt, or added to pastas and grain salads. Try frying thin zucchini coins in extra virgin olive and sprinkling them with chopped mint after draining on paper towels. It is the ultimate summer squash prepartion in Apulia, Italy and a delightful antipasto served with chilled white wine.
