Peruvian white asparagus stalks are slender and grow buried under soil so sunlight doesn't reach them. Like all white asparagus they are exceedingly tender and delicate, and less fibrous than green asparagus. Boil 5-7 minutes in salted water and serve simply with a drizzle of quality olive oil, aged Balsamic, salt and pepper. You can garnish with diced roasted red peppers & a dusting of fresh thyme.
