Italian mascarpone is made from cream gathered from cows grazing on grasses, herbs and flowers in Lombardy. Italian Mascarpone is much richer than American-style cream cheese, and is made without starters or rennet. While nearly everyone associates mascarpone with the dessert classic tiramisu, it can also be layered between fresh berries and zabaglione, or served with fresh figs. Mascarpone is versatile for savory dishes, too, in place of butter or heavy cream to enrich a cream sauce, or for risotto.
